Brie & Artichoke Stuffed Alaska Halibut

INGREDIENTS
- 1 package 10oz Orca Bay Halibut Fillets (thawed) 
- vegetable oil or pan spray 
- salt and pepper, to taste - Artichoke & Brie Stuffing 
- 1/2 cup mayonnaise 
- 1/2 cup (6 oz. wt.) brie cheese, cut in small cubes 
- 1/4 cup chopped artichoke hearts, (drained well) 
- 1/4 teaspoon ground black pepper 
- 2 tablespoons chopped fresh basil - Black Pepper Lemon Vinaigrette 
- 1 lemon, juiced (about 2 tablespoons) 
- 1 tablespoons Dijon mustard 
- 1/8 teaspoon freshly ground black pepper 
- 1/4 teaspoon salt 
- 2 tablespoons extra virgin olive oil 
- 2 tablespoons chopped fresh basil 
Cooking Instructions
Step 1
Combine all the ingredients for the artichoke and brie stuffing and refrigerate until ready to use.
Step 2
Combine all the ingredients for the black pepper lemon vinaigrette and set aside until ready to use.
Step 3
Preheat oven to 400° F. Lightly oil or pan spray an oven proof baking dish. Arrange the halibut fillets in the pan, and season with salt and pepper. 3. Using a paring knife, make a long slit on the top of each piece of halibut (not cutting all the way through). Fill each fillet with about 3 tablespoons of the artichoke & brie stuffing, dividing evenly.
Step 3
Bake in preheated oven for about 15-20 minutes* until the fish is cooked through and the stuffing is golden brown. Transfer to a serving dish, drizzle with the black pepper lemon vinaigrette and enjoy!
*The cooking time is estimate and will vary depending on the thickness of the fish and the performance of your oven.
Chef’s Tips:
• This stuffing is also excellent with crab meat added.
• Serve with grilled asparagus and garlic mashed potatoes.
